December 2020 Self-Isolation Meals

L - Turkey Noodle soup - from turkey stock made by putting onion, carrot, celery and turkey bones in instapot for 30 min high pressure. Should have strained after first prepared, but I put in the frig. The stock had so much gelatin - it was difficult to pull the bones and things out. I ended up heating it and then straining. served with crackers
D - Alex's Chicken Pot Pie - but we made with turkey https://www.youtube.com/watch?v=IbgpNZfi6Xo
Sourcream crust https://www.simplyrecipes.com/recipes/sour_cream_pie_crust/, lots of wine, sauce, carrots, cauliflower, add peas before putting in the casserole, top with crust. Well received, and looked very nice. Supposed to be 8 servings I think, but we will end up with more than that. Next time cook the carrots separately, maybe microwave them.

L - Alex's Chicken Pot Pie with the last of the sage dressing - when we had I just portioned off the pot pie into each plate so each person got a little of the crust. (We had considered making crust separately and adding with each serving. Not needed. But if we did that it would be easier to add different spices to the pie part, which may tire of since it made so many servings!)
D - instapot crazy chicken with frozen chicken breasts, salsa, hot sauce, orange marmalade, cumin served with rice and salad. Well received. "Best chicken I've had in a long time." "I always like sauce with rice." "Lots of flavor."

I went thru the inspection report and almost finalized the questions for the owner - thought I was done but when I double checked saw somethings I had missed. When I submitted I put that these were current questions and list of remediations. The RE people said to wait on the remediation list so that's okay.
It was a busy day for each of us.

Walk with Buffy

L - Made French Dip Sandwiches in the instant pot. First, seared about 3 lbs of chuck in a little oil. As I turned it added salt and pepper. Removed the meat to a plate. Added some red wine and used a spoon to deglaze the pan. Put in an onion cut into 3 thick slices, and a few 'baby' carrots, then replaced the meat. Added a packet of onion soup mix and about 2 T garlic better than boullion, some left over pizza sauce, a few bay leaves and added about 3 cups of water. About an inch of the meat was above the water. Pressed meat and left on a walk. The meat cooked and had about 2 hours of just being kept warm. It fell apart - very moist and lovely. We piled some on lightly buttered, toasted Costco square rolls. Wonderful. We have enough for 1 or 2 sandwiches more for each of us! Alex suggested saving the au ju to use in a soup - or would enhance beans and/or rice too.
D/T - Made choc chip cookies and hot chocolate for dinner.

Bernie drove me to PT - it was a good appointment for me.
We decided that there would be too much maintenance needed for the house, so he wrote the agent to start the cancelling of offer procedure. The fence didn't align with the actual property borders, the second stories were not recorded with the county, we kept asking for information to find out how things should be maintained, and didn't get answers. The price for the home owners insurance was three times what we pay here, much more than I expected. We realized we'd be spending a ton of time interviewing workers and waiting around for them - and that would seriously take away from enjoying the place or life in general. The agent was new in RE, was having family troubles, and didn't do a good job of getting back to us. So disappointed but relieved to be almost out of that project.
Nice walk with B B A after lunch - Buffy was very energetic and walked at a great pace.
Looked at online activities for quilting - and even started building the back of the wreath pillow
A and J did separate walks more than 4 hours each after the Buffy walk.

L - salad with beef, blueberries pecans, cheddar cheese and dressing made with O V and jam! served with crackers.

Walk with A B Buffy - short one.
Then longer walk with Bernie by the grocery store and back! Great to do, We chatted a bit and listened to book or podcast for most of the time.

L - Lima Beans with English Muffins and the last of the potato chips
D - Alex got drive thru Mexican Food for us. B and A had burritos, J had chilaquiles - next time J will try something else.

Made a freezer pie with chocolate and cheesecake pudding mix, milk, cool whip, unsweetened condensed milk, duncan Hines Cherry pie filling - put into oreo crust and then the freezer.

Walk to mail the postcards, B met me on the way back so shared the rest of the walk
