White Bean Chili with Roasted Corn and Peppers - The Daring Gourmet

My family gives this recipe a double thumbs up!


  • 4 c white beans (soaked overnight and the drained)

  • 1 tablespoon canola oil
  • 1 large yellow onion , chopped
  • 3 cloves garlic , minced

  • 1 tablespoon homemade chili powder (click link for her recipe)  I used Chugwater Chili I already had 
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1 bay leaf

  • 2 cans roasted green chilies.  Did not drain these
  • 2 cans of roasted corn, drain well
  • 2 tablespoons tomato paste (I only had the bottom of two bottles of ketchup and the bottom of  a jar of salsa)
  • chicken broth to cover the mixture in the instant pot - I also added some leftover chicken noodle soup

ADD RIGHT BEFORE SERVING
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice

two nights  before serving 
Soak beans in water in frig

Day after soaking
4 c or about 1 lb. beans I made the soup
Put 1 T canola oil in insta pot, set to saute and add the diced 1 onion - cook until a little clear.
Measure spices and other ingredients
Add everything to the instapot, set to bean/chili
Let it cool a bit then put into container and in the frig
Scoop up what you need and serve.

Day after making the soup
Make corn bread
Scoop up what you need and heat it.
Add cilantro and lime just before serving

I think I will get 9 servings (3 meals) from this - 

Possible additions:
meat (pork roast) spinach, more corn, more green chilies

Very well received.
