Salted Caramel Cookie Cups

INGREDIENTS
1 package (14 oz) Pillsbury® Simply…® refrigerated peanut butter cookies
1 1/4 cups caramels, unwrapped
1 tablespoon water
2 tablespoons milk
2 teaspoons coarse sea salt for garnish

PREPARATION
  1. Heat oven to 350°F.
  2. Spray 32 mini muffin cups with cooking spray.
  3. Remove cookie dough rounds from tray; break each in half.
  4. Place half cookie dough round in each muffin cup.
  5. Bake 15 to 20 minutes or until golden brown.
  6. Using end of wooden spoon, carefully press into center of each baked cookie to make 1-inch-wide indentation.
  7. In medium microwavable bowl, microwave caramels and water on High 1 minute.
  8. Stir; repeat until caramels are completely melted and can be stirred smooth.
  9. Stir in milk.
  10. Fill each cookie cup with about 1 tablespoon melted caramel.
  11. Gently cover with plastic wrap.
  12. Let stand at room temperature about 1 hour or until set.
  13. When caramel filling is set, sprinkle a few granules of coarse sea salt on top of each.

Here's the recipe for these rolls..they're easy to make and I think they should be called Never Fail Yeast Rolls. They are the best light and fully dinner rolls I've made!

INGREDIENTS
4 cups all-purpose flour
1/3 cup sugar
1 teaspoon salt
1 package dry yeast
1 1/2 cups hot tap water
1 egg
1/3 cup softened butter or vegetable shortening

DETAILS

Preparation time 25 mins
Cooking time 265 mins


PREPARATION

Sift together two cups of the flour with the sugar, salt, and stir in the yeast.

With mixer at low speed, blend shortening or butter into the flour mixture.

Add the hot water (the hottest it comes from your tap, all at once, with mixer running. Add the egg, and continue mixing. Add in the remaining two cups flour to make a soft dough.

At this point, I changed my mixer beaters for dough hooks and let the mixer knead the dough for about ten minutes and then put it into an oiled bowl, cover with a towel and allow to rise in a warm spot until doubled, about two hours.

Punch dough down.

At this point it can either be refrigerated or shaped in rolls or loaves and allowed to rise a second time until doubled, usually about an hour.

Bake in a preheated 375°F oven until barely brown.

May be frozen after baking and reheated to serve.

LOAVES:
2 1/2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
1 cup butter, softened
2 cups sugar
3 eggs
1 teaspoon vanilla
3/4 cup sour cream
1 (10-ounce) package Hershey's cinnamon chips

TOPPING:
3 tablespoons sugar
3 teaspoons cinnamon

DETAILS

Servings 8
Preparation time 10 mins
Cooking time 48 mins


PREPARATION

To make the loaves, mix butter, sugar, salt and cinnamon until fluffy. Add eggs and mix well. Add vanilla and sour cream and mix well.

Mix flour and baking powder in a separate bowl. Add to wet ingredients and mix until all combined. Add cinnamon chips and stir into batter. Set aside.

Spoon batter into 4 mini loaf pans until about 2/3 full.

Mix topping ingredients in a bowl and sprinkle over the batter in each loaf pan.

Bake at 350°F for 35 to 38 minutes. Let cool before removing from pan.

In the afternoon, we went to park for a lovely walk with Buffy.  
I used to bring Alex to this park once a week while he was in k-grade.  We hosted a birthday party here for him.  We went to the first tables available as it was a little down hill for my folks to walk.  I know we had food and cake.  But even though the four Friday Group kids and their moms met us there too, I only remember the perfect gift from my parents.  It was a yellow ball - he loved playing with that.


This park is designed so people in wheel chairs can have fun on the paths and equipment.

Years later, I would bring my mom her when she was in a wheel chair.  I would somehow get the wheelchair over to his piece of equipment.  She would stand and reach up and walk while hold on to the rungs of the horizontal ladder.

We had such a nice time last Sunday on our walk that we decided to try going to a different park with Buffy again.  This time we drove to the park that was by my folks place.  So many people were there, but it is a large one so socially distancing was easy to do.  These little family outings have been our first since the shut in.  It's sort of a soft restart to normal life for us.

Laundry, lots of clothes on hangers to dry. Went thru everything in the bathroom, really organized and clean now. Need to get some new shelf liner and put up a shelf to keep the hair dryer and tooth brush off the counter. Started reorganization of food and spent morning cleaning things in kitchen (while waiting for Buffy's med times).
