Milkstreet Shrimp in Chipotle Sauce

I watched this being made during a live class at Milkstreet.  If you haven't heard of Milkstreet, or think it's just the name of a public television show or podcast you will be delighted to learn they have a wonderful online program!  https://www.177milkstreet.com/  Clearly written and tested recipes, magazine, live demos, live classes, and self-paced lessons too!  They have a 12-week trial that gives you access to pretty much everything for just a $1 now - the full year is $59.

Put in food processor, blend until combined

4 tomatoes

4 chipotle chilies with the adobe sauce


Put 2 T oil into pan and heat.

While that is happening, take 1.5 lbs shrimp and put on a plate, use paper towel to remove moisture on one side.

add half of the shrimp to the pan - take care to put the dry side down.

Cook until the shrimp starts to become golden on the under side.  then remove to a bowl and cook the rest of the shrimp.

Add 2 T lime juice and put aside.


Into the pan now put another 2 T of oil

Add 1 diced onion for about 4 minutes. (turning transparent)

Add 3 sliced garlic cloves, 1/2 t oregano and cook for about 1 minute (turning brown)

Stir in 1/4 c dry wine and any shrimp juice from the bowl.

Cook stirring until almost all gone.


Add the food processed mixture and cook stirring until very thick.


Remove from the heat.

Stir in the shrimp, cover and let sit until shrimp white and cooked thru - about 2-4 min.


Stir in 1/2 c chopped cilantro and 2 T lime juice.  Taste, season S&P if needed.


Serve in toco format with warm tortillas, avocado slices and sour cream. and lime wedges.

Or with scrambled eggs and grape tomatoes!

We each had with two corn tortillas and some sliced avocado and plain yogurt the first night.  So add another 100 - 150 calories.

Then the second night I set rigged up a double boiler to heat the shrimp mixture while I made the scrambled eggs.
