This recipe was shared by my husband's friend, George. I may have met him in person, I'm not sure. But if I ever do, I will thank him for this nice recipe.
2 T butter
1 kielbasa - sliced roughly
1 diced onion
1 lb sauerkraut (in a bag)
1 c chicken or ham stock
salt
1. In large pan, heat butter then add roughly cut kielbasa. Cook, turning the meat until it is nicely browned (about 5 minutes). This step is for browning - will add a lot of flavor. Remove from heat.
2. Add diced onion to the pan and stir it as it browns (about 10 minutes). Add the rinsed and drained sauerkraut and cook for a few minutes. Add the meat to the pan, add the stock and cook until the meat is cooked thru (about 30 minutes). Season as needed with salt.
3. Can refrigerate, but warm before serving.
I've made something similar before, but using the kielbasa, and adding the broth is a game changer.
I think it would be okay to use canned or jarred sauerkraut. Would also be good to learn how to make myself from cabbage!
