Pork or Chicken Verde: Louise's Crockpot Recipe

Original Recipe

1 sm jar salsa verde

1 4-oz can chopped Anaheim Chilies

3 boneless, skinless chicken breasts or 1 lb boneless loin

1 14-oz can black or any other beans, drained and rinsed

1 can corn, drained

1 chopped medium onion

Hot, cooked rice

Combine all ingredients except rice in crock pot.  Cook about 7 hours, shred meat at 5-6 hours.

Serve over rice

1 sm jar salsa verde - didn't have 

1 one jar of salsa

2 chopped Anaheim chilies

1 4-oz can chopped Anaheim Chilies

3 boneless, skinless chicken breasts or 1 lb boneless loin pork, cut into 1/2 inch dice

1 14-oz can black or any other beans, drained and rinsed

2 cups dried lentils, rinsed

1 can corn, drained

1 chopped medium onion

Hot, cooked rice

Combine all ingredients except rice in crock pot.  Cook about 7 hours, shred meat at 5-6 hours.  Instapot, set for cooking meat.  I couldn't stop the pot and shred so I cut the pork into small 1/2 inch pieces.

Serve over rice and with cheese quesadillas

 YUM!
