Wednesday, July 1

D - Japanese Katsu Curry Chicken with rice and brussel sprouts - side lettuce/tomato/avocado salad with my salad dressing About Katsu Curry - not the recipe I used but a nice Japanese cooking site!




Thursday, July 2

B - Oatmeal
L - Ärtsoppa and English Muffins
D - Japanese Curry Chicken, green beans, rice
T - strawberries with whipped cream

Friday, July 3

B- Oatmeal
L - tuna salad + bread + celery + Mayo + relish with corn chips and avocado
Made bigger bolder baker ice cream: strawberry, choc, p-nut butter
D- BBQ Chicken and red onion pizza







Saturday, July 4

B - Oatmeal
L - Pastrami reuben sandwich + potato salad and broccoli salad
D - strawberry ice cream -yep that is all we had!  It was a big lunch




Strawberry ice cream - recipe versions on several sites.  1 pt heavy cream whipped to peaks, add chilled can of sweetened condensed milk and a little vanilla and whip again. I divided into 3 parts I think and added flavors.  then it has to freeze for at least 4 or 5 hours.  In this version I added a little (1 T strawberry jam) and about 1/2 c of cut up strawberries.  The fresh strawberries were too icy in this attempt.


Sunday, July 5

B- Oatmeal
L- BBQ chicken pizza with potato salad and broccoli salad
D- Bernie made eggs with pastrami, cheese and sauerkraut, with the stuff I made: Russian dressing and instant potato flake pancakes with sour cream and applesauce.



I made sourdough bread - divided in half and put rosemary in part and cinnamon and raisins in the other part.

Monday, July 6

D- Cabbage casserole with chicken and tomatoes from the backyard





Cabbage Casserole - I found several recipes on YouTube.  Some asked for a ton of butter.  I changed up so there wasn't as much fat.  Took photos to show the measurements.



This recipe, believe it or not, had less butter than the original site I found.  I used even less and it was very good anyway...





Tuesday, July 7

D- Bernie added more crackers and butter to the cabbage casserole

Made no yeast WW bread - this time added more seeds - was delicious but didn't hold together as well as the original bigger bolder baker recipe
L - rest of cabbage bake - added some cheese on the top for B and A
D- hot dog, potato salad, my coleslaw dressing on fresh cabbage
T- no yeast WW bread




Thursday, July 9

We got new pill minders for little dog, Buffy.  I like the way the week opens on the back.  Makes it much easier to put her split pills in order.  So at least every two or four days she has the complete pill.

B- cereal
L- tuna on bread, potato salad with fresh apple and apricot slices
D- mexican chicken + avocado on shredded cabbage








Friday, July 10
Made black beans

B- Oatmeal
L- Black beans with bacon, onion and bouillon + rice
D- Chicken with classico alfredo sauce and mex seasoning on scrambled eggs with asparagus and our tomatoes and toast and butter.








Saturday, July 11

B- Oatmeal
L- Black beans and bread - blackberries and whipped cream
D- Spaghetti with presto sauce, sausage, onion, mushrooms, and our raw bell peppers

L- Round up leftovers: A hotdog, sauerkraut, B pasta and sauce, J Nutri-system Cheese Tortellini
D- black beans, coleslaw and our tomatoes, WW quesadilla with salsa and guacamole

When we have oatmeal I have been trading off different things to add in.  Here it's pecans and coconut.












Monday, July 13

L- Refried beans, salsa, guacamole, cheese  quesadillas
D- Chicken, rice, peas, chickpeas, lemon, onion and our carrot tops
T- hearts and cribbage had the rest of the strawberry and chocolate ice cream




Tuesday, July 14

L- Chicken, rice, peas, chickpeas, lemon, carrot tops and onion
D-pizza with pepperoni, cheese and herbs
T- banana ice cream - made in the juicer it was very soft






Wednesday, July 15
B- oatmeal
L- rice, green beans, scrambled egg, canadian bacon, soy sauce
Made aquafaba ice cream
Ordered food from Tender Greens - our first premade food since this shut in - also got their box of vegetables.
D- tender greens spinach salad + our tomatoes + avocado + tender greens tri tip steak + tendergreens dressing and our WW toast
T- Banana ice cream made in larger blender this time with less milk - much better consistency! 






This p-nut butter aquafaba ice cream was very fun to make. Needed time to harden so we had the banana ice cream as a treat that night.

Thursday, July 16

D- corn cob (made in the instapot), squash, steak, spinach salad
T- aquafaba p-nut butter ice cream

This was the created with 3/4 c of the aquafaba - about 7 x 11 inches.  I put ground chocolate chips on half of the ice cream.

Carrots for Buffy's treats

  • Pressure Cook Corn on the Cob: Pour 1 cup of cold water in Instant Pot. Place a trivet in the Instant Pot, then place 4 ears of corn on the cob on the trivet.
    Close the lid and Pressure Cook at High Pressure for 1 - 2 minutes + Quick Release. Open the lid carefully.
  • Serve: Serve immediately with butter, your favorite sauce or topping.

Received someone else's meds today, instead of Buffy's.  The packages had been opened and things taken out.  Used the RX label to call their pharmacy so they could reship, and called Chewy's to resend all of Buffy's meds.

Going to try to have lots of salad mixes - while we can - will be a nice summer dinner. A week of salads?







Already there are metal signs reminding us to social distance.

Bernie walked with me this am - we went on this little walk I discovered a while back.  Fun!

Can't tell from the photo but after the rocks it was a rather steep climb.  Glad we started from the end of the trail that we did!

Watched Endeavor Session 2, episode 1 together - first tv all together in a long time.  Guess it was my anniversary gift.




Bernie's pots are looking very nice now!

Used the blender to created powdered sugar.  Think I will get some powdered monk fruit to see if that will work instead of sugar.

Took another long walk in a different part of the neighborhood - actually went out of our neighborhood it was such a long walk.  I liked the way this house didn't have mulch nor weeds!  Bernie met me about here in the walk - it was really nice to have his company for the walks.


At the park saw the high building in the distance.  It is in between the trees - have to enlarge to see.  I can't figure out where that is!

Surprise fence posts!  I like that from the front it looks like a solid post.

But from the side can see that the posts are made from bricks!  They seem to be glued to the circles at the bottom of each post - not dug into the ground...

B- Oatmeal - we all ate together. Bernie had blood draw later that morning so he needed to eat.

T- last of the aquafaba rum raisin and a little with p-nut butter too!

3 Ingredient Banana Bread


Serves 10

 

INGREDIENTS

 

5 medium overripe bananas + 1 ripe banana to garnish

1 tin condensed milk 

2¼ cups SASKO Self-Raising Flour

 

Serving suggestion: 

Butter

 

METHOD

 

  1. Preheat the oven to 180 and grease a loaf tin. 

  2. In a large mixing bowl, mash the bananas lightly using a fork.*Chef’s Tip: If your bananas are underripe, place them on a tray in their skins and bake at 180 for 15-18 minutes until blackened on the outside and soft on the inside. 

  3. Pour in the condensed milk and mix well. 

  4. Sieve flour over condensed milk-banana mixture and fold in until just combined. 

  5. Pour the batter into a greased loaf tin. If desired, arrange two banana halves over the top of the loaf.

  6. Bake for 60 minutes or until a skewer inserted in the centre comes out clean. If the top becomes too dark during cooking time, cover with foil.

  7. Allow the loaf to cool in the tin for 5 minutes before transferring to a wire rack. 

  8. Slice the banana bread while still warm, spread generously with butter and ENJOY!

The toaster oven has stopped working.  Company is sending a replacement.  In the meantime, I'm so used to use the toaster oven, it seems wasteful to use the big oven for just one dish.  The microwave is easier to clean up too...

Signs in the nearby neighborhood (almost next door to a pro Trump sign).  There are several pairings like that.  Some say BLM and Science Matters.  I wonder if those neighbors were ever friends.

Friday, July 31

Made frozen yogurt
L - pinto with nan and cheese
D - Salad and pesto noodles and string beans


Bigger bolder baker frozen yogurt.  The only change I made was using corn syrup instead of honey.  It was impossible to scoop.  Had to cut servings out!

I finally shelled the peas.  Some pinto and some were lima (I think). Storing in the frig.
